How is it possible to introduce certain underutilized crops in people’s diet if they are considered weeds or animal feed?
May be we should try to narrow “people” and focus on some targeted audience. May be some gastronomic club or organic movement at local restaurants, already cooked dishes could be offered on food fairs in order to get people taste them and get interested.
It also can be labeled as “healthy”, “nutritious”, “energizing”, “weight losing”, etc. 🙂
